Buffalo-style drumsticks with crispy, spiced fries

Take a culinary trip to the States with our hot-and-spicy chicken drumsticks.

Ingredients:

Chicken 
  • 100ml tomato sauce
  • 1/4 cup (60ml) sriracha sauce
  • 10g brown sugar
  • 20g butter
  • 1 Tbsp (15ml) red wine vinegar
  • 6 chicken drumsticks
Fries 
  • 1 Tbsp (15ml) barbecue spice
  • 1 Tbsp (15ml) smoked paprika
  • 1 tsp (5ml) fine salt
  • 1/2 tsp (2.5ml) ground black pepper
  • 750g frozen crinkle fries
Ranch dressing
  • 1/2 cup (125ml) mayonnaise
  • 1/4 cup (60ml) sour cream
  • 1/4 cup (60ml) buttermilk
  • 1/2 tsp (2.5ml) dried parsley
  • 1/2 tsp (2.5ml) dried dill
  • 1/2 tsp (2.5ml) garlic powder
  • 1 tsp (5ml) lemon juice
  • salt and pepper

Method:

Chicken
  •  Place the tomato sauce, chilli sauce, sugar, butter and vinegar into a pot and bring to the boil.
  •  Simmer for 5 minutes, and then set aside to cool to room temperature.
  •  Pour half of the mixture over the chicken drumsticks and coat well. Leave to marinate for at least 1 hour.
  •  Heat the braai to medium heat. Cook the drumsticks, turning and basting every 5 minutes, for about 30 minutes, until they are cooked through and charred.
Chips
  •  Combine the barbecue spice, smoked paprika, salt and black pepper. Blend, if necessary.
  •  Fry or bake the chips according to package instructions.
  •  Sprinkle the seasoning over the hot chips.
Ranch dressing
  •  Mix all the ingredients, seasoning to taste with salt and pepper.
Serve the chicken with chips and a bowl of ranch dressing for dipping.
