Chilli, Orange & Lime Grilled Chicken With A Spicy Orange Salad

Zingy citrus and hot chilli is a winning flavour combination, and this recipe proves it again!
Ingredients:
Chicken:- 1 orange, peeled and chopped
- 1 - 2 red chillis, deseeded and chopped (quantity to your preference)
- 2 garlic cloves
- ½ cup (125ml) coriander leaves
- ¼ cup (60ml) lime juice
- 1 tsp (5ml) salt
- 1 Tbsp (15ml) olive oil
- 1 x County Fair Braai Pack
- 1 red chilli, deseeded and thinly sliced
- Juice of 2 limes
- Zest of 1 lime
- 1 Tbsp (15ml) honey
- 2 Tbsp (30ml) olive oil
- 2 oranges, peeled and chopped
- ½ cucumber, cut into matchsticks
- ½ red onion, thinly sliced
- ¼ cup (60ml) coriander, roughly chopped
- ¼ cup (60ml) mint, roughly chopped
- ½ cup (125ml) toasted cashew nuts, roughly chopped
Method:
- Place the orange, chilli, garlic, coriander, lime juice, salt and olive oil in a food processor or blender. Blend until smooth.
- Place the chicken pieces in a bowl and pour over the orange marinade. Toss well, and allow to marinate in the fridge for a minimum of 3 hours, ideally overnight, for maximum flavour.
- Set your braai to medium-low heat. Grill the chicken pieces for 20-25 minutes until cooked through with a nice char; the timing will depend on the size of the chicken pieces.
- Salad: In a bowl, whisk together the chilli, lime juice, lime zest, honey and olive oil. Put aside.
- Place the orange, cucumber, red onion, coriander, mint, and cashews into a bowl. Pour over the dressing and toss.
- Serve with the juicy grilled chicken.
