Chicken Satay Skewers with Chilli Cucumber & Onion Salad

Celebrate summer with this Asian-inspired chicken satay recipe. Great as a party snack.
Ingredients:
Sauce:- 1 chilli, sliced
- 1 lemongrass, roughly chopped
- ½ cup (125ml) coconut cream
- 2 Tbsp (30ml) soy sauce
- 50g peanut butter
- 12 pieces Southern crumb chicken strips
- 1 Tbsp (15ml) chilli crunch
- 1 Tbsp (15ml) sesame oil
- 1 lemon, juiced
- 8 mini cucumbers, cut on the diagonal
- 1 red onion, thinly sliced
Method:
- To make the sauce, combine all ingredients in a blender, and blend until you get a paste. Add a tablespoon of water if the paste is too thick for the blender.
- Place chicken strips on a lined baking tray and baste both sides with satay sauce.
- Bake in a preheated oven at 180°C for 15 minutes.
- To prepare the salad, in a bowl, whisk chilli crunch, sesame oil and lemon juice. Toss in cucumber and onion slices and coat with the dressing.
