Greek-style Chicken Served In Homemade Flatbread

This dish is a delightful blend of Mediterranean flavours, combining tender, juicy chicken with a homemade flatbread.

Ingredients:

Flatbread:
  • 2 ½ cups (350g) self-raising flour
  • 1 tsp (5ml) baking powder
  • 2 ½ cups (350ml) yoghurt
 
  • 12 pieces chicken strips
  • 1 cucumber, grated
  • 1 cup (250ml) yoghurt
  • ½ garlic clove, minced
  • 1 lemon, juiced
  • 5 g (5ml) parsley, roughly chopped
  • 1 chickpea can, drained
  • 1 Tbsp (15ml) olive oil
  • 1 Tbsp (15ml) smoked paprika
  • 1 red onion, sliced
  • 1 cos lettuce, shredded

Method:

  1. Preheat the oven to 180°C and bake chicken strips for 15 minutes.
  2. In a large bowl, whisk together the self-raising flour and baking powder.
  3. Gradually pour the yoghurt into the dry ingredients, mixing until a dough forms, you need only knead for about 3 minutes.
  4. Lightly dust a work surface with flour, and divide the dough into 6 equal portions. 
  5. Flatten the dough with your hands, and then take a rolling pin and roll it out till about 0.5cm thin.
  6. On a greased griddle pan, cook flatbread for about 2 minutes each side.
  7. To make tzatziki, combine cucumber, yoghurt, garlic, parsley and season with lemon juice plus salt and pepper.
  8. To make the chickpeas, toss with oil and paprika and lightly pan fry until the chickpeas start popping slightly. Set aside.
  9. To assemble, place a dollop of tzatziki on flatbread, followed by chickpeas, onions, lettuce and chicken pieces.
