Greek-style Chicken Served In Homemade Flatbread

This dish is a delightful blend of Mediterranean flavours, combining tender, juicy chicken with a homemade flatbread.
Ingredients:
Flatbread:- 2 ½ cups (350g) self-raising flour
- 1 tsp (5ml) baking powder
- 2 ½ cups (350ml) yoghurt
- 12 pieces chicken strips
- 1 cucumber, grated
- 1 cup (250ml) yoghurt
- ½ garlic clove, minced
- 1 lemon, juiced
- 5 g (5ml) parsley, roughly chopped
- 1 chickpea can, drained
- 1 Tbsp (15ml) olive oil
- 1 Tbsp (15ml) smoked paprika
- 1 red onion, sliced
- 1 cos lettuce, shredded
Method:
- Preheat the oven to 180°C and bake chicken strips for 15 minutes.
- In a large bowl, whisk together the self-raising flour and baking powder.
- Gradually pour the yoghurt into the dry ingredients, mixing until a dough forms, you need only knead for about 3 minutes.
- Lightly dust a work surface with flour, and divide the dough into 6 equal portions.
- Flatten the dough with your hands, and then take a rolling pin and roll it out till about 0.5cm thin.
- On a greased griddle pan, cook flatbread for about 2 minutes each side.
- To make tzatziki, combine cucumber, yoghurt, garlic, parsley and season with lemon juice plus salt and pepper.
- To make the chickpeas, toss with oil and paprika and lightly pan fry until the chickpeas start popping slightly. Set aside.
- To assemble, place a dollop of tzatziki on flatbread, followed by chickpeas, onions, lettuce and chicken pieces.
