BBQ Beer Chicken With A Fresh Tomato & Avocado Ranch Pasta Salad

Beer does not only add flavour to this recipe it also tenderises the meat for the juiciest braaied chicken.
Ingredients:
Chicken:- ¼ cup (60ml) BBQ sauce
- 1 cup (250ml) beer
- 1 Tbsp (15ml) smoked paprika
- 1 tsp (5ml) ground cumin
- 1 tsp (5ml) cayenne pepper
- Juice of 1 lime
- 15g parsley, chopped
- 4 cloves garlic, finely minced
- 1 Tbsp (15ml) salt
- ½ tsp (2.5ml) ground black pepper
- 1 x County Fair Braai Pack
- ½ cup (125ml) mayonnaise
- ¼ cup (60ml) sour cream
- ¼ cup (60ml) milk
- 1 garlic clove, minced
- 1 Tbsp (15ml) finely chopped chives
- 1 Tbsp (15ml) finely chopped parsley
- ½ Tbsp (7.5ml) lemon juice
- ½ tsp (2.5ml) lemon zest
- ½ tsp (2.5ml) onion powder
- Pinch black pepper
- 2 ½ cups (625ml) cooked and cooled fusilli pasta
- 400g cherry tomatoes, halved
- ⅓ cucumber, cut into small cubes
- 1 large ripe avocado, peeled and cubed
- 15g rocket, chopped
- 20g basil, torn
Method:
- Prepare the chicken: In a bowl, whisk together the BBQ sauce, beer, smoked paprika, cumin, cayenne pepper, lime juice, parsley, garlic, salt and pepper. Add the chicken pieces and toss well, massaging the marinade into the chicken pieces.
- Allow to marinade for a minimum of 4 hours, tossing every hour or so.
- Heat the braai to medium-low heat. Cook the chicken pieces, turning every couple of minutes, until golden and cooked through. About 20-25 minutes.
- Prepare the pasta salad: Whisk together the mayonnaise, sour cream, milk, garlic, chives, parsley, lemon juice, zest, onion powder and black pepper. Set aside.
- Place the pasta in a bowl with the tomato, cucumber, avocado, rocket and basil. Pour in the dressing and toss gently. Serve with the cooked chicken.
