Chicken neck pot

Not sure how to prepare chicken necks? Using a potjie is often the best and most delicious solution for this budget-friendly cut.
Ingredients:
- 1kg chicken necks
- 1 tsp oil
- 5 carrots, chopped
- 1 onion, chopped
- 2 tbsp tomato paste
- 1½ cup chicken stock
- 1 tsp cayenne pepper
- 2 tsp chicken spice
- salt and pepper
- samp or pap
Method:
- Add oil to a pot and fry chicken necks over medium heat for 5 minutes. Stir continuously.
- Add carrots and onions and cook until onions are soft.
- Stir in tomato paste, stock, cayenne pepper and chicken spice.
- Simmer for 15 minutes or until slightly thickened. Season with salt and pepper.
- Serve with samp or pap.
