Chicken Satay Skewers with Chilli Cucumber & Onion Salad

Celebrate summer with this Asian-inspired chicken satay recipe. Great as a party snack.

Ingredients:

Sauce:
  • 1 chilli, sliced
  • 1 lemongrass, roughly chopped
  • ½ cup (125ml) coconut cream
  • 2 Tbsp (30ml) soy sauce
  • 50g peanut butter
  • 12 pieces Southern crumb chicken strips
Cucumber Salad:
  • 1 Tbsp (15ml) chilli crunch
  • 1 Tbsp (15ml) sesame oil
  • 1 lemon, juiced
  • 8 mini cucumbers, cut on the diagonal
  • 1 red onion, thinly sliced

Method:

  1. To make the sauce, combine all ingredients in a blender, and blend until you get a paste. Add a tablespoon of water if the paste is too thick for the blender.
  2. Place chicken strips on a lined baking tray and baste both sides with satay sauce.
  3. Bake in a preheated oven at 180°C for 15 minutes.
  4. To prepare the salad, in a bowl, whisk chilli crunch, sesame oil and lemon juice. Toss in cucumber and onion slices and coat with the dressing.
Serve chicken and salad together.
