For the schnitzel
  • 4 chicken breast fillets
  • 1 cup (250 ml) flour
  • 2 Tbsp (30 ml) cayenne pepper
  • ½ cup (125ml) cornflake cereal, crushed
  • Salt and pepper
  • ⅔ cup (200ml) amasi
  • 1 egg
  • ½ cup (125 ml) chilli sauce
  • ½ cup (125 ml) oil

For the greens

  • 1 bunch kale
  • 1 bunch spinach
  • 3 Tbsp (45 ml) oil
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • ½ lemon zest
  • ¼ red pepper, chopped
  • Salt
Sauce
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • ½ cup (125 ml) tomato sauce
  • ½ cup (125 ml) chutney
  • 3 Tbsp (45 ml) Worcestershire sauce
  • ¼ cup (60 ml) water
  • 2 Tbsp (30 ml) hot sauce
  • 3 Tbsp (45 ml) vinegar

Pap to serve

Method:

  1. Slice each chicken breast horizontally starting from the edge halfway open.
  2. Place plastic wrap on top of the chicken and flatten it slightly using a rolling pin.
  3. Mix flour, cayenne pepper, cornflakes, salt, and pepper in a shallow bowl.
  4. Combine amasi, egg and chilli sauce in a separate shallow bowl.
  5. Coat chicken breast in flour mixture on both sides. Dip in egg mixture covering well and then into flour mixture again. Set aside and do the rest of the chicken breasts.
  6. Heat oil in a pan over medium-low heat. When oil is hot add coated chicken and cook in batches until golden brown on both sides.
  7. Stir-fry kale, spinach, and onion in an oiled pan for 5 minutes. Stir in garlic, lemon zest, pepper, and salt continue to stir-fry for 2 minutes and set aside.
  8. Prepare the sauce: Add all in a small pot and simmer for 10 minutes or until thickened.
  9. Serve chicken schnitzel with greens, pap and sauce.
