This simple dish makes the perfect mid-week family meal.
Ingredients:
Rice:
2 tbsp oil
1 onion, chopped
3 garlic cloves, chopped
1 cup (250ml) frozen peas
2 cups rice
700ml chicken stock
1 tsp ground cumin
salt
Chicken:
2 tbsp oil
8 chicken drumsticks
1 tbsp chicken spice
1 cup chicken stock
Method:
For the rice:
- Heat oil in a saucepan over medium high heat.
- Add onion and garlic cook until fragrant.
- Add the rice and cook for 2 minutes. Pour in the stock and bring to a boil.
- Reduce the heat, cover with a lid, and cook for 10 minutes.
- Stir in the cumin and peas. Set aside.
For the chicken:
- Heat oil in a saucepan.
- Add the chicken and sprinkle in the chicken spice.
- Pour in the chicken stock and simmer for 15 minutes.
- Serve the chicken with the rice and a red pepper and onion salsa!
