Shisa Nyama Chicken Plates With Uphuthu Salad

A hearty braai plate to treat friends and family to.

Ingredients:

Ingredients for Chicken:
  • 8 pieces of chicken  
  • 2 Tbsp (30ml) oil
  • 2 Tbsp (30ml) peri-peri or BBQ sauce (for marinating)
  • 1 Tbsp (15ml) smoked paprika (or normal paprika)
  • 1 tsp (5ml) garlic powder
  • 1 tsp (5ml) ground cumin
  • 1 tsp (5ml) chilli flakes (optional for heat)
  • Salt and pepper to taste
  • Fresh lemon wedges for serving
Ingredients for Uphuthu Salad:
  • 3 cups cooked cooled uphuthu (ideally made with a rough ground mieliemeal)
  • ½ cup (125ml) chopped tomatoes
  • ½ cup (125ml) chopped cucumber
  • ¼ cup (60ml) red onion, finely diced
  • ¼ cup (60ml) chopped green/red/or yellow pepper
  • 3 Tbsp (45ml) oil
  • 2 Tbsp (30ml) lemon juice
  • 1 tsp (5ml) chopped fresh parsley or coriander
  • Salt and pepper to taste
A variety of other vegetable sides of your choice like coleslaw, roasted butternut, etc.

Method:

  1. Prepare the chicken: In a bowl, mix the oil, peri-peri or BBQ sauce, paprika, garlic powder, cumin, chilli flakes (if using), salt, and pepper. Rub the marinade over the chicken pieces and let them marinate for at least 30 minutes or overnight for more flavour.
  2. Preheat the grill (or braai) to medium-high heat. Braai the chicken for 25-30 minutes, turning occasionally, until cooked through and charred on the outside. You can also use an oven to roast the chicken at 200°C for 35-40 minutes.
  3. For the uphuthu salad: Once the uphuthu has cooled, fluff it up with a fork. 
  4. In a large bowl, mix the uphuthu with the tomatoes, cucumber, red onion and peppers.
  5. Drizzle with oil and lemon juice. Season with salt, pepper, and fresh parsley or coriander. Toss everything together.
  6. Serve the chicken with the salad and other vegetable sides of choice.
