Sticky onion and green pepper chicken

Our take on Madiba’s favourite chicken recipe – the perfect way to get the family together and keep a legend alive.

Ingredients:

  • 1 chicken, cut up into pieces or 8-10 chicken pieces
  • 2 tsp (10 ml) chicken spice
  • Pepper
  • 1 onion, cut into 8ths
  • 1 green pepper, cut into chunks
  • 1 tsp (5 ml) crushed garlic
  • 1 ½ cups (375 ml) chutney
  • 1 cup (250 ml) mayonnaise
  • 2 Tbsp (30 ml) curry powder
  • Juice of a lemon
  • 1 cup (250 ml) water

Method:

  1. Preheat the oven to 180℃.
  2. Coat the chicken in chicken spice, add a sprinkle of pepper.
  3. Add the onion and green pepper.
  4. Arrange in a single layer in a baking tray/oven to table dish.  Roast for 15 minutes.
  5. While the chicken is cooking, mix the garlic, chutney, mayonnaise, curry powder and water together.
  6. Pour the sauce over the chicken and place back into the oven at 160 ℃ for 30 minutes. Serve with rice.
