Sticky onion and green pepper chicken

Our take on Madiba’s favourite chicken recipe – the perfect way to get the family together and keep a legend alive.
Ingredients:
- 1 chicken, cut up into pieces or 8-10 chicken pieces
- 2 tsp (10 ml) chicken spice
- Pepper
- 1 onion, cut into 8ths
- 1 green pepper, cut into chunks
- 1 tsp (5 ml) crushed garlic
- 1 ½ cups (375 ml) chutney
- 1 cup (250 ml) mayonnaise
- 2 Tbsp (30 ml) curry powder
- Juice of a lemon
- 1 cup (250 ml) water
Method:
- Preheat the oven to 180℃.
- Coat the chicken in chicken spice, add a sprinkle of pepper.
- Add the onion and green pepper.
- Arrange in a single layer in a baking tray/oven to table dish. Roast for 15 minutes.
- While the chicken is cooking, mix the garlic, chutney, mayonnaise, curry powder and water together.
- Pour the sauce over the chicken and place back into the oven at 160 ℃ for 30 minutes. Serve with rice.
