Summer Chicken Rice Paper Rolls With Sesame Soy Dipping Sauce

If summer were a bite – this would be it! The perfect light lunch to enjoy poolside.

Ingredients:

Dipping Sauce:
  • ¼ cup (60ml) soy sauce
  • 3 Tbsp (45ml) sweet chilli sauce 
  • ½ tsp (2.5ml) sesame oil
  • 1 clove garlic, finely minced
  • ½ tsp (2.5ml) ginger, finely minced 
  • 1 tsp (5ml) toasted sesame seeds
Coconut Poached Chicken:
  • 1 x County Fair Skinless Chicken Breasts
  • 1 thumb ginger, roughly chopped
  • 4 cloves garlic, squashed
  • 1 small chilli, roughly chopped
  • ⅔ cup (160ml) chicken stock
  • 1 can (400ml) coconut milk
  • 1 tsp (5ml) salt
  • Juice and zest of 1 lime
 
  • 50g rice noodles
  • 1 carrot
  • 1 small cucumber
  • 1 red pepper
  • 100g red cabbage
  • Handful fresh mint leaves, picked
  • Handful fresh basil leaves, picked
 
  • 12 round rice paper sheets

Method:

  1. For the dipping sauce: Whisk all the ingredients together. Set aside.
  2. Prepare the Coconut Poached Chicken: Place the ginger, garlic, chilli, chicken stock, coconut milk, salt, lime juice and zest in a pot. 
  3. Bring to a simmer then add the chicken breasts. Turn down to medium heat, and allow the chicken to simmer gently. Flip the chicken every 5 minutes. After 10 minutes, check the doneness of the chicken. Cook until no longer pink inside. 
  4. Once cooked, remove from the liquid and allow to cool, then shred. 
  5. Cook the noodles to the package instructions. 
  6. Prepare the carrots, cucumber and red pepper by slicing them into thin matchsticks. Shred the cabbage. 
  7. Fill a large bowl with lukewarm water. Dip the rice paper in for about 20 seconds. Remove from the water and lay on a clean work surface. 
  8. Place a few leaves of mint and basil, chicken, rice noodles, carrots, cucumber, red pepper and red cabbage at the left centre of the rice paper. Fold the bottom and top over the filling, fold the left side over, and roll to the right to enclose the filling.  Repeat with the remaining rice papers. 
  9. Serve the rice paper rolls on a platter with the dipping sauce.
